However, unless you’re planning to serve the whole duck again, I usually recommend removing the meat from the carcass first and freezing it in portions. It saves valuable freezer space and significantly reduces thawing time.

- Allow the duck to cool completely.
- If freezing a whole duck, decide whether to leave it whole or portion the meat first.

After this it will still be safe to eat if it has remained frozen, although the quality may gradually decline.
How To Defrost Cooked Duck
The safest way to defrost cooked duck is overnight in the fridge.
Larger portions or a whole duck may take longer, so allow plenty of time.
Avoid defrosting at room temperature, as this increases the amount of time the duck spends in the temperature danger zone where bacteria can multiply.
How To Reheat Cooked Duck
Duck should always be reheated until piping hot throughout.
In the oven
This is the best option for duck breasts, duck legs and whole roast duck.
Place the duck in an ovenproof dish, cover loosely with foil and cook at 180°C until heated through. Remove the foil for the final few minutes if you’d like to crisp up the skin.
In a frying pan
If you’re adding duck to a stir fry, noodles or fried rice, simply warm it gently in a frying pan until piping hot.
In the microwave
The microwave works well for shredded duck or smaller portions, although it won’t keep the skin crispy.
Heat in short bursts until steaming hot throughout.
In the air fryer
The air fryer is one of my favourite ways to reheat cooked duck.
Cook at 180°C for 5-8 minutes, depending on the size of the portion, until thoroughly heated. It does a great job of crisping the skin while keeping the meat juicy.
Can You Cook Duck Legs From Frozen?
Yes, duck legs can be cooked from frozen.
You’ll usually need to allow around 20 minutes of additional cooking time, although it’s always worth checking the cooking instructions for your recipe.
Make sure the duck is piping hot all the way through before serving.
