If you’re baking ahead for a special occasion, I recommend freezing the sponge layers separately and adding the buttercream and jam after they’ve defrosted. However, if you’re freezing leftover cake, there’s no reason not to freeze it fully assembled.

Freezing Victoria sponge is simple.

  • If freezing leftovers, cut the cake into slices so you can remove one or two pieces at a time.
  • Wrap each slice (or the whole cake) in two layers of cling film.
  • Place the wrapped cake into a freezer bag or airtight container for extra protection.
  • Label and date before freezing.

If you’re freezing a whole decorated cake, placing it inside a deep cake tin or sturdy container will help protect it from getting squashed while it’s freezing.

How Long Can You Freeze Victoria Sponge?

Victoria sponge can be frozen for up to six months.

Although it will still be safe to eat after this, the sponge may gradually lose some of its freshness and become more susceptible to freezer burn.

How To Defrost Victoria Sponge

For the best results, thaw Victoria sponge overnight in the fridge.

If you’ve frozen individual slices, they’ll usually thaw within a couple of hours at room temperature.

Once defrosted, enjoy as normal. Personally, I think there’s nothing better than a slice of Victoria sponge with a good cup of tea.
