Can You Freeze Brioche Buns? Yes, Here’s Everything You Need To know
Whether you’ve baked a batch yourself or picked up a pack from the supermarket, brioche buns don’t stay fresh for very long. If you’ve got leftovers, the good news is that freezing them is an easy way to stop them going to waste.
What Are Brioche Buns?
Brioche is a French bread made with an enriched dough containing butter and eggs. This gives it a much softer texture and a slightly sweet flavour compared to an ordinary bread roll.
Although brioche is traditionally served with sweet breakfasts and pastries, it’s become incredibly popular as a burger bun over the last few years. We especially like using brioche buns for pulled pork or slow-cooked BBQ brisket, where the slight sweetness works really well.
Not everyone is a fan though. If you prefer a more savoury burger, a traditional white bun might be more your thing.
Fresh brioche usually keeps for just a day or two, especially if it’s homemade, so freezing any extras makes a lot of sense.

Can You Freeze Brioche Buns?
Yes, brioche buns freeze very well.
Freezing doesn’t noticeably affect their flavour or soft texture, making it one of the easiest breads to freeze successfully. Whether they’re homemade, bakery bought or from the supermarket, they’ll be just as useful once defrosted.
This works for:
- Brioche burger buns
- Brioche hot dog rolls
- Mini brioche rolls
- Sweet brioche buns
Can You Freeze a Brioche Loaf?
Absolutely.
Whole brioche loaves and sliced brioche both freeze well. Personally, I’d recommend slicing a loaf before freezing unless you know you’ll use the whole thing at once. It means you can simply remove however many slices you need rather than waiting for the entire loaf to thaw.
Can You Freeze Brioche Dough?
Yes.
If you’re making brioche from scratch, freeze the dough after the first rise. Wrap it well in cling film before placing it into a freezer bag or airtight container.
For the best results, use frozen brioche dough within two weeks. Defrost it overnight in the fridge before shaping, allowing it to complete its second rise and baking as normal.
Can You Freeze Shop-Bought Brioche?
Yes, including popular brands such as St Pierre.
As brioche buns are often a little more expensive than standard bread rolls, freezing any leftovers is a simple way to save both money and food waste.
Can You Freeze Chocolate Chip Brioche?
Yes.
Chocolate chip brioche freezes just as well as plain brioche. Wrap it carefully and use within three months for the best flavour and texture.
How to Freeze Brioche Buns
Freezing brioche only takes a few minutes.
- If the buns are homemade, allow them to cool completely first.
- Wrap them well in cling film, foil or place them inside a freezer bag. Removing as much air as possible helps prevent freezer burn.
- If you’re unlikely to use them all at once, wrap the buns individually so you can take out just what you need. Or if your supermarket packaging is unopened just pop into the freezer as they are.
- Label and date the bag before placing it in the freezer.
The same method works for whole brioche loaves too.

How Long Do Brioche Buns Last in the Freezer?
Brioche buns are best used within three months.
They’ll still be safe to eat after that, but like most bread, they gradually lose some of their freshness and become more prone to freezer burn.
I always recommend writing the freezing date on the bag. It’s surprising how quickly mystery items start building up in the freezer!

How to Defrost Brioche Buns
Brioche defrosts quite quickly.
Simply remove the buns from their freezer wrapping and leave them at room temperature for a couple of hours.
I like to wrap them in a clean tea towel while they thaw. It helps absorb any moisture and keeps the crust from becoming damp.
If you’re using the buns for burgers, warming them in the oven for five minutes or giving them a quick toast after defrosting brings them back beautifully.
Frequently Asked Questions
Can You Toast Brioche Straight from Frozen?
Yes. If the brioche is already sliced, you can pop it straight into the toaster from frozen. Whole buns are better defrosted first before warming or toasting.
Can You Refreeze Brioche?
If the brioche has been defrosted in the fridge and is still fresh, it can be refrozen. However, each freeze-thaw cycle affects the quality a little more, so I generally recommend freezing it only once where possible.
Does Freezing Change the Texture?
Not noticeably. Brioche remains soft after freezing, although it can dry out if it isn’t wrapped properly or has been left in the freezer for several months.
