What Is A Sponge Cake?

A traditional sponge cake is made from flour, butter, sugar and eggs, although there are countless variations including chocolate, lemon and vanilla sponge.

From fairy cakes and cupcakes to celebration cakes and Victoria sponge, most sponge-based cakes can be frozen successfully.

Can You Freeze A Sponge Cake?

Yes, you can freeze a sponge cake.

Plain sponge cakes freeze particularly well, but many decorated cakes can also be frozen depending on the type of icing and decorations used.

If you’re baking ahead for a birthday, wedding or other celebration, it’s usually best to freeze the sponge before decorating, then add the icing once the cake has defrosted.

Homemade and shop-bought sponge cakes can both be frozen.

Does Sponge Cake Freeze Well?

Yes. Sponge cake keeps its flavour and texture very well in the freezer.

The only thing you may notice is that paper cases on cupcakes or fairy cakes can loosen slightly after defrosting, but this doesn’t affect how they taste.

How To Freeze A Sponge Cake

Freezing sponge cake is simple:

  • Allow the cake to cool completely.
  • Freeze it whole or in slices, depending on how you plan to use it.
  • Wrap tightly in two layers of cling film.
  • Add a second layer of protection using foil, a freezer bag or an airtight container.
  • Label and date before freezing.

If you’re freezing cupcakes or fairy cakes, freeze them on a tray for 1-2 hours first before transferring them to a freezer bag. This stops them sticking together and makes it easy to remove just one or two at a time.

How Long Can You Freeze Sponge Cake?

Sponge cake can be frozen for up to three months.

It will usually still be safe to eat after that, but the texture may begin to dry out and freezer burn becomes more likely.

How To Defrost Sponge Cake

For the best results, thaw sponge cake overnight in the fridge.

If you’re short on time, smaller cakes can be defrosted at room temperature in a couple of hours.

Once thawed, decorate or fill the cake as normal.

Can You Refreeze Sponge Cake?

It’s generally best not to refreeze sponge cake once it has fully thawed, as repeated freezing can affect the texture.

However, if you’ve used the thawed sponge as part of another recipe, such as cake pops, the finished dish can often be frozen if the other ingredients are suitable.
