Can You Freeze Baileys Irish Cream?
Baileys Irish Cream is a Christmas favourite in our house, but let’s be honest, it’s rare to finish the whole bottle in one go. If you’ve got some left after the festive season, you might be wondering whether freezing it is a good way to make it last longer.
The short answer is no. While Baileys will freeze, it doesn’t freeze well and the quality suffers once it’s thawed.
Can You Freeze Baileys?
No, freezing Baileys Irish Cream isn’t recommended.
Because Baileys is made from a blend of Irish whiskey and fresh dairy cream, freezing causes the ingredients to separate. Once thawed, the texture often becomes grainy or curdled and it’s difficult to get it smooth again.
Although the alcohol means it won’t freeze completely solid in a normal home freezer, the cream can still become damaged during freezing and thawing.
If you simply want to enjoy Baileys cold, it’s much better to chill the bottle in the fridge rather than freezing it.
Can You Freeze Homemade Baileys?
Unfortunately not.
Homemade Irish cream contains fresh dairy and doesn’t contain the same stabilisers used in commercial Baileys. Freezing causes the mixture to separate even more easily, leaving it with an unpleasant texture.
Instead, keep homemade Irish cream refrigerated and use it within the timeframe recommended by your recipe (usually around 6-8 weeks).
Does Baileys Need To Be Refrigerated?

An unopened or opened bottle of branded Baileys can be stored at room temperature provided it’s kept:
- Below 25°C

Many people prefer keeping Baileys in the fridge because it tastes better served cold, but refrigeration isn’t essential.
Store-brand Irish cream liqueurs can be different though, so always check the label, as some brands recommend refrigeration after opening.
How Long Does Baileys Last?
According to the manufacturer, Baileys has a shelf life of two years from the date of manufacture, whether the bottle has been opened or not, provided it’s stored correctly.
You’ll find the best-before date printed on the bottle or label.
After this date it may still be drinkable, but the flavour and texture can begin to deteriorate.
How Can You Tell If Baileys Has Gone Bad?
If you’re unsure whether your Baileys is still safe to drink, look for these signs:
- A sour or rancid smell
- Lumps or curdling
- Obvious separation that won’t mix back together
- An unusual taste
If in doubt, it’s safest to throw it away.

To keep Baileys at its best for as long as possible:
- Keep the lid tightly closed.
- Store below 25°C.

Can You Freeze Baileys In Ice Cubes?
Technically yes, but I wouldn’t recommend it.
The cream can separate as it freezes, so once the cubes melt they often have a grainy texture. If you’re looking for chilled Baileys in drinks, it’s much better to refrigerate the bottle or use regular ice cubes.
What Can You Do With Leftover Baileys?
Rather than trying to freeze it, use it up in recipes. Baileys works brilliantly in desserts and baking, including:
- Cheesecake
- Chocolate mousse
- Cupcakes
- Irish coffee
- Whipped cream
Using leftover Baileys this way helps prevent waste and means you won’t have to worry about it sitting in the cupboard for months.
