What Is Madeira Cake?

Madeira cake differs from a Victoria Sponge in that it has more flour, resulting in a denser sponge which is similar to the American pound cake.

Madeira Cake is so named not because it comes from Madeira but because it was often enjoyed with a glass of Madeira wine when it became popular in the 1800s. It is usually flavoured with lemon.

Madeira cake will keep for 7-10 days after baking.

How To Freeze Madeira Cake

Freeze your Madeira cake using these simple steps.

You can either freeze the cake whole or in smaller slices. Smaller slices mean there is more surface area that could be susceptible to freezer burn, but it also means you can get out smaller portions as and when you need them, resulting in less waste overall.

  1. Before freezing, make sure the Madeira cake is completely cold.
  2. Wrap the cake in cling film and then place it inside a Tupperware container. I find this double layer helps protect the cake from absorbing smells from the freezer and also from getting damaged if heavier items are accidentally placed on top of it.
  3. Label and date the Madeira Cake for future reference before placing carefully into the freezer.

How Long Does Madeira Cake Last In The Freezer?

The Madeira cake will last for around two months in the freezer. After this time it’s still safe to eat but the quality will be affected as cake tends to dry out when frozen for too long.

How To Defrost Madeira Cake

Maderia Cake should be defrosted in the fridge overnight. If ice particles have formed on the cake, try gently wrapping it in a clean tea towel to absorb some of the moisture and help prevent the cake from becoming soggy.

Once thawed you can decorate and ice your Madeira cake as you usually would.

Madeira Cake that has been previously frozen should not be frozen again.
