Can You Freeze Cake Batter?
It can be frustrating to end up with more cake batter than you need, especially after carefully measuring all of your ingredients.
Rather than throwing it away, you might be wondering whether you can freeze cake batter and use it another day.
Unfortunately, the answer isn’t as straightforward as you might hope.

Can You Freeze Cake Batter?
In most cases, no, cake batter shouldn’t be frozen.
Cake batter relies on raising agents such as baking powder or bicarbonate of soda to help the cake rise. Once these ingredients are mixed with the wet ingredients, a chemical reaction begins.
Freezing stops that reaction. When the batter is eventually baked, it often won’t rise properly, leaving you with a cake that’s dense and heavy instead of light and fluffy.
Can You Freeze Cake Mix?
If you’re referring to prepared cake mix that has already been mixed with eggs, butter or water, the advice is the same – it’s generally best not to freeze it.
However, dry cake mix that hasn’t been prepared doesn’t need freezing. It already has a long shelf life and will usually keep well in a cool, dry cupboard until its best-before date.
What Should You Do With Leftover Cake Batter?
Rather than freezing cake batter, I recommend baking it all and freezing the finished cake instead.
Some easy ways to use up extra batter include:
- making a few extra cupcakes
- baking a smaller loaf cake
- trying a different flavour by adding lemon, chocolate or spices
- turning the baked cake into cake pops or trifle later
If you need to delay baking for a short time, cake batter can usually be refrigerated for a few hours, although the finished cake may not rise quite as well.

How To Freeze A Baked Sponge Cake
While cake batter doesn’t freeze well, baked sponge cake freezes brilliantly.
- Allow the cake to cool completely.
- Wrap it tightly in two layers of cling film.
- Place it inside a freezer bag or airtight container.
- Label and date before freezing.
Baked sponge cake can be frozen for up to three months.
How To Defrost Sponge Cake
For the best results, thaw sponge cake overnight in the fridge.
If you plan to decorate it with buttercream or fresh cream, wait until it has completely thawed before adding the icing.
