What Is Battenberg Cake?
Battenberg cake is made from two different coloured sponge cakes, traditionally pink and yellow, arranged in a checkerboard pattern and wrapped in marzipan.
It’s thought to have been created to celebrate the marriage of Princess Victoria, Queen Victoria’s granddaughter, to Prince Louis of Battenberg in 1884. Whether or not that’s the whole story, it’s become one of Britain’s most recognisable cakes.
Can You Freeze Battenberg Cake?
Yes, you can freeze Battenberg cake.
Both homemade and shop-bought Battenberg freeze well for up to 3 months. The sponge stays soft and the flavour is largely unaffected.
The only slight downside is that the marzipan can become a little sticky once it’s defrosted. It still tastes exactly the same, but it may not look quite as neat if you’re serving it for a special occasion.
Can You Freeze Homemade Battenberg?
Absolutely.
Homemade Battenberg should be completely cool before freezing. Once wrapped well, it freezes just as successfully as a shop-bought cake.

How To Freeze Battenberg Cake
Freezing Battenberg is nice and simple.
- Allow homemade cake to cool completely.
- Decide whether to freeze the whole cake or individual slices.
- Wrap well in cling film followed by foil or place it in an airtight freezer container.
- Label with the freezing date before placing it in the freezer.
I usually freeze individual slices as they’re much more convenient when you just fancy a piece with a cup of tea.
How Long Can You Freeze Battenberg Cake?
For the best quality, eat frozen Battenberg within 3 months.
It’ll still be safe after that, but the sponge may begin to dry out slightly and the marzipan won’t be at its best.
How To Defrost Battenberg Cake
Remove the wrapping and leave the cake to thaw at room temperature.
Slices usually take 1-2 hours, while a whole cake may need 3-4 hours, depending on the temperature of your kitchen.
How To Store Battenberg After Defrosting
Once thawed, keep Battenberg in an airtight cake tin or container.
Because the marzipan can become a little sticky after freezing, I find a cake carrier or rigid container works much better than wrapping it back up in cling film.
The cake is best eaten within 3-4 days of defrosting.
