Can You Freeze Caramel Shortbread?
If you’ve made a batch of caramel shortbread (or bought rather more than you intended!), you might be wondering whether it can be frozen.
Personally, I’m not convinced there’s such a thing as too much caramel shortbread, but if you do have leftovers, the good news is that they freeze really well.
If you’re looking for more freezing advice, you’ll find all of my guides on the Freezing Food Hub.
What Is Caramel Shortbread?
Caramel shortbread, sometimes called Millionaire’s Shortbread or Millionaire’s Slice, is made from three delicious layers: buttery shortbread, soft caramel and a topping of milk chocolate.
It’s one of my favourite things to order in a good bakery alongside a proper cup of tea.
Although the classic version uses milk chocolate, you’ll also find recipes topped with dark or white chocolate, and some include extras such as coconut or sea salt.
Can You Freeze Caramel Shortbread?
Yes, you can freeze caramel shortbread.
Both homemade and shop-bought caramel shortbread freeze well for up to 3 months. The flavour is virtually unchanged, although you may notice the caramel is slightly softer once it’s thawed.
Freezing is a great way to make a batch ahead or simply stop any leftovers from going to waste.
Can You Freeze Homemade Millionaire’s Shortbread?
Absolutely.
Homemade caramel shortbread freezes brilliantly once it’s fully cooled and set.
If I’m baking ahead for Christmas or another occasion, I’ll often freeze it in portions so I can take out exactly what I need.
Can You Freeze Shop-Bought Caramel Shortbread?
Yes, provided it hasn’t already been frozen.
If you’re unsure, it’s worth checking the packaging first, as some bakery products are supplied frozen before being baked in store.
How To Freeze Caramel Shortbread
Freezing caramel shortbread is nice and straightforward.
- Allow the shortbread to cool and the caramel to set completely.
- Cut into individual squares if preferred.
- Wrap well in cling film or place in an airtight freezer container.
- Label with the freezing date before putting it in the freezer.
I usually freeze individual pieces as they’re much easier to grab when you just fancy one with a cup of tea.

How Long Can You Freeze Caramel Shortbread?
For the best quality, eat caramel shortbread within 3 months.
It’ll still be safe after that, but the biscuit may soften slightly and the caramel won’t be quite as firm.
How To Defrost Caramel Shortbread
Leave the wrapped shortbread to thaw at room temperature for 2-4 hours, depending on the size of the pieces.
Alternatively, transfer it to the fridge overnight.
If you notice a little condensation on the chocolate after thawing, simply dab it gently with kitchen paper.
