Can You Freeze Sticky Date Pudding?

Sticky date pudding is a delicious dessert that’s popular in both the UK and Australia (where it’s often called sticky toffee pudding). If you’ve made too much or want to prepare it in advance, you might be wondering whether it can be frozen.

While “sticky toffee pudding” is the more common name in the UK, “sticky date pudding” is often used in Australia and some other countries.

Regardless of the name, the freezing instructions are exactly the same.

Can You Freeze Sticky Date Pudding?

Yes, sticky date pudding freezes very well.

For the best results, freeze the sponge and sauce separately if possible. While the pudding itself freezes beautifully, the toffee sauce can sometimes split slightly after defrosting, although it usually comes back together when gently reheated.

Sticky date pudding is an excellent make-ahead dessert for dinner parties, holidays and other special occasions.

How To Freeze Sticky Date Pudding

Allow the pudding to cool completely before freezing. If you’ve baked it in a metal tin, remove it and leave it to cool on a wire rack.

If possible, freeze the sponge before adding the sauce and freeze the sauce separately.

  • Wrap the pudding tightly in cling film.
  • Place it in a freezer bag, airtight container or wrap in foil for extra protection against freezer burn and odours.
  • Label and date before freezing.
  • If freezing the sauce separately, allow it to cool completely before transferring it to a freezer-safe container, leaving a little room for expansion.

How Long Does Sticky Date Pudding Last In The Freezer?

Sticky date pudding will keep in the freezer for up to three months.

It will still be safe to eat after this, but the quality may begin to decline and it can become more susceptible to freezer burn.

How To Defrost Sticky Date Pudding

For best results, defrost the pudding and sauce overnight in the fridge.

If you’re short on time, you can thaw them at room temperature for a few hours before transferring them to the fridge until you’re ready to reheat.

How To Reheat Sticky Date Pudding

Individual portions can be reheated in the microwave for around 45 seconds on high, although cooking times will vary between microwaves. Continue heating in 20-second bursts until piping hot.

Alternatively, reheat the puddings in the oven at 180°C (Gas Mark 4) for around 15 minutes, covering them with foil to prevent the tops from drying out.

It’s best to reheat the sauce separately, either gently in a saucepan over a low heat or in the microwave.

If the sauce has separated or thickened slightly after freezing, simply whisk it while reheating and add a splash of milk or cream if needed to restore its consistency.
