Can You Freeze Salami?

Salami is one of those ingredients I always seem to have in the fridge. Since my husband and I bought an Ooni pizza oven, it’s become one of our favourite pizza toppings, but it’s equally handy for sandwiches, pasta dishes and charcuterie boards.

The only downside is that you don’t always use a whole salami before it starts drying out. The good news is that freezing is an easy way to make it last longer.

Can You Freeze Salami?

Yes, you can freeze salami. Whole salami, sliced salami and even pre-packaged deli slices all freeze well for up to three months.

Because salami is a cured meat, it already has a long shelf life, so freezing isn’t always necessary. However, if you’ve opened it and don’t think you’ll finish it within the next few weeks, freezing is a great way to reduce food waste.

Does Salami Need Freezing?

Not always.

One of the benefits of cured meats is that they naturally last much longer than fresh meat.

  • Whole unopened salami can often be stored for several weeks (or even longer depending on the manufacturer).
  • Once cut into, it will still keep well in the fridge for around 3-4 weeks if wrapped properly.
  • Pre-sliced deli packs usually have a much shorter shelf life once opened, so they’re the ones I’m most likely to freeze.

If you’re going to use the salami within the next week or two, I’d usually leave it in the fridge.

Can You Freeze A Whole Salami?

Yes.

A whole salami freezes very well. Wrap it tightly to prevent it drying out and store it in the freezer for up to three months.

If you only use small amounts at a time, consider cutting the salami into two or three sections before freezing. That way you only need to thaw what you’ll actually use.

Can You Freeze Sliced Salami?

Yes, sliced salami freezes brilliantly.

This includes:

  • slices you’ve cut yourself
  • supermarket deli packs
  • vacuum-packed sliced salami

If you’re freezing loose slices, I recommend flash-freezing them first so they don’t stick together. It makes it much easier to remove just a handful when you’re making pizza or sandwiches.

How To Freeze Salami

Freezing salami only takes a few minutes.

  1. Decide whether to freeze the salami whole, in chunks or already sliced.
  2. Wrap whole pieces tightly in cling film or place them into a freezer bag or airtight container.
  3. For slices, either freeze the unopened packet or flash-freeze individual slices on a tray before transferring them to a freezer bag.
  4. Remove as much air as possible.
  5. Label and date before placing into the freezer.

How Long Does Salami Last In The Freezer?

Salami keeps well in the freezer for up to three months.

Although it’ll still be safe to eat after that, the texture can begin to dry out and freezer burn becomes more likely, so I always try to use it within that timeframe.

How To Defrost Salami

The safest way to defrost salami is overnight in the fridge.

Because sliced salami is so thin, it often thaws within a couple of hours, while a whole salami will naturally take longer.

Once thawed, use it just as you normally would.

Can You Refreeze Salami?

It’s best not to.

Once salami has been thawed, it shouldn’t be frozen again unless it has been cooked first as part of another dish.

How To Tell If Salami Has Gone Bad

Cured meats last a long time, but they don’t last forever.

Discard salami if you notice:

  • green, black or furry mould
  • a sour or unpleasant smell
  • a slimy or sticky texture
  • excessive moisture inside the packaging

It’s perfectly normal for some traditional salamis to develop a light white powdery mould on the outside. That’s part of the curing process and isn’t the same as spoiled mould.

Frequently Asked Questions

Can you freeze vacuum-packed salami?

Yes. An unopened vacuum-packed salami can be placed straight into the freezer in its original packaging.

Can you freeze deli salami?

Yes. Deli salami freezes well, although it’s best to wrap opened packs well to prevent freezer burn.

Can you freeze salami for pizza?

Absolutely. In fact, this is what I do most often. I freeze sliced salami so I can grab just the amount I need for homemade pizzas without having to thaw the whole pack.

Can you freeze salami sticks?

Yes. Salami sticks can be frozen whole or cut into smaller portions before freezing.
